- Five major hen egg proteins have ben identified: Gal d 1-5. Most of these proteins are found in egg whites. The allergenicity of these proteins depends mainly ( but not exclusively) on their resistance to heat and digestive enzymes.
- The patient may experience hives (plaques on the body associated with itching), angioedema (swelling of the eyelids, lips, hands), abdominal pain, vomiting, diarrhea, shortness of breath, wheezing and even anaphylaxis ( severe reaction)
